Irmik Helvasi

Serves 8-10

  • 2 cups semolina
  • 225 gr butter
  • 2 tablespoons pine nuts
  • 2 cups milk
  • 2 cups sugar
  • 1-2 teaspoons ground cinnamon

Melt the butter in a saucepan. Stir in the pine nuts and semolina, and cook on the middium-low heat until lightly browned.  In other bowl stir milk and sugar. Add the syrup slowly in to the pot. Mix well, cover the lid for 1-2 minutes until the syrup is almost absorbed ( there must be still liquid in the mixture).Remove the pot from the heat and leave to stand 5-10 minutes .Serve it when it is still warm with cinnamon.

Thick Yogurt

  • 750 ml yogurt
  • cheesecloth ( coffee filters)

Place a strainer with a cheesecloth( coffee filters) on top of a bowl. Poue the yogurt into it and gather together the corners, and then tie them. Leave to drain 4-5 hours ( or overnight) in the fridge.

The consistency should be like creem cheese.
